Chocolate Chip Banana Bread

I know , I know, two quick bread posts in a row! But I really enjoyed this during Hurricane Irma and I had to share. I’m happy to say that hurricane Irma is now safetly behind us. We were very blessed that we had no damage done to our property and that all of our family and friends are safe. But with that I have this really delicious banana bread that was created in all of the chaos that was hurricane Irma. Maybe I should call it Hurricane Irma bread? Hmm.. anyways I had way to many bananas in my freezer, I tend to just throw over ripe bananas in the freezer skin and all. When you are ready to use them you could either thaw it or run it under the tap for a few seconds and then peel with a knife, I also had to use up my eggs, I was trying to get rid of my perishables. With a hurricane comes power outages which equals to spoiled food. So here we have a wonderful chocolate chip banana bread. Enjoy!

First we mash the bananas and add the pumpkin pie spice and brown sugar and eggs . We aren’t adding much sugar or any fat since I wanted to keep this on the light side. Be sure to use very ripe bananas for added sweetness.

Now we add the flour, baking soda, baking powder and salt. Mix until combined and then add the chocolate chips, reserve about 1 Tbs to add to the top of the bread once in the bread pan.

Bake in the oven at 350 F for 40 to 45 minutes. Then remove from oven and let cool. What I love about this bread is that it’s almost healthy-ish. So you could totally have this for breakfast. I hope you will enjoy, hasta la proxima!

Oh yeah and little hands have been known to enjoy this bread as well.

Chocolate chip Banana Bread

This isn’t your typical over indulgent banana bread. It is lightly sweetened, you have to have really ripe bananas for more sweetness.

Also no fat in this, I wanted to make it a little healthier to enjoy for breakfast.


  • 4 very ripe bananas
  • 2 eggs
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 c brown sugar
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 c + 1 TBS chocolate chips


Preheat oven to 350 F

  1. Mash bananas and mix in the eggs, pumpkin pie spice, vanilla extract, brown sugar. Mix until combined.
  2. Then add the flour, baking powder, baking soda, salt and mix until almost combined. Then add 1/3 cup of chocolate chips and mix until everything is combined.
  3. Spray a 9×5 inch loaf pan with baking spray. Then add banana bread mixture, sprinkle the 1 TBS of chocolate chips over the top and bake for 40 to 45 minutes. Let cool before removing from pan.
